Winter has finally set in here in Mid-Michigan which means bring on the comfort foods!
Let’s face it, after spending the day outside in the cold and snow, it’s nice to come in to a warm hearty meal. However, who wants to spend the day cooking said meal (especially when you could be playing in the snow)?
That why I love using my crock pot!! Throw everything in. Set it and forget it until dinner time. Plus, it usually means minimal clean up. All things this busy momma loves.
I also love to make a good curry or tiki Marsala in our crock pot too.
However, nothings screams comfort food like a warm and gooey bowl of Mac and cheese.
This first time I made this recipe my husband had recently tried smoking blocks of cheese in his electric smoker. I added a few pieces of that in the recipe and the smokey flavor really does shine through. If you have smoked cheese available by all means use it in this recipe. If not, don’t worry. It still comes out tasting delicious!
I also stumbled across Cream of Bacon at the grocery store. I love adding a can of that plus a can of Cream of Chicken to this recipe for a unique flavor. If you can’t find Cream of Bacon, two cans of Cream of Chicken will work or you can substitute a can of Cream of Mushroom.
2 cups uncooked noodles
1 small can cream of chicken soup
1 small can cream of bacon soup
1 teaspoon onion powder
1/2 teaspoon pepper
1/2 cup sour cream
1/2 cup mayonnaise
2 cups cheddar cheese
2 cups mozzarella cheese
Boil noodles but undercook them slightly (2-3 minutes less than directed). Combine cooked noodles and the rest of the ingredients in crock pot. Cook on high for 2 hours or on low for 3 hours.
