My husband and I work crazy shifts leaving very few nights for family dinners. As a result, it’s easy to fall into the trap of going out to eat or having to warm up a box of macaroni and cheese because you forgot to take something out of the freezer to make for dinner. While my toddler would love the idea of noodles or even cereal every night for dinner, I knew my husband would be less than thrilled. He’s a very good cook (I admit probably better than me though I can still out bake him) but taking care of a toddler solo doesn’t lend much time to chopping, mixing, stirring, and baking a nutritious meal.
With this desire to make sure my family was eating healthy in my absence, I turned to the internet for some easy meal prep ideas. Of course, Pinterest was there to save the day. The site was filled with quick and simple recipes (some of which I’ve included on my page).
My favorite so far has been this Chicken Burrito Bowl recipe (both my husband and I love Mexican plus the prep time on this is pretty much non-existent). I cook and package it on Sunday night and it makes about 4 meals we can eat during the week. If you want to change up the recipe you can also use a tortilla to create a delicious homemade burrito.
